Orange Ricotta Pancakes

Directions

1. Combine flour, sugar, baking powder, baking soda and salt in a bowl.

2. In a separate bowl combine ricotta cheese, milk, orange rind, orange juice, and egg yolks.

3. In a 3rd bowl, beat egg whites until soft peaks form.

4. Fold in wet ingredients with dry ingredients and once combined, fold in egg whites.

5. Pour until a hot griddle (375 degrees) using a ¼ cup measuring cup. Flip over once bubbles form.

6. Enjoy with syrup of your choice!
