I could eat pumpkin at any time of the year but this recipe is especially good during the holidays! I hope it becomes one of your favorites as well.

2 cups flour
2 tsp baking soda
½ tsp salt
½ tsp cinnamon
2 cups sugar
4 eggs
2 cups pumpkin
1 cup canola oil
Frosting: 3 oz cream cheese
Frosting: ½ cup butter
Frosting: 1 tsp vanilla
Frosting: 2 cups powdered sugar
Preheat oven to 350 degrees.
Beat together the first 5 ingredients, (flour - sugar) in a large bowl. Add the eggs, pumpkin and oil. Mix until thoroughly combined.
Pour into a cookie sheet lined with parchment. If you don’t have parchment, spray the cookie sheet with olive oil for each clean up.
Bake in the oven for 20-25 min. When a toothpick comes out clean, they are done. Set aside to cool.
Once cool, frost, (directions below), cut into bars and serve!
Frosting: Combine all ingredients in a large bowl and beat together until smooth. You may need to add more milk or powdered sugar to get the taste and consistency right. Spread over cooled bars.
