Pumpkin Bars with Cream Cheese Frosting

Pumpkin Bars with Cream Cheese Frosting

I could eat pumpkin at any time of the year but this recipe is especially good during the holidays!  I hope it becomes one of your favorites as well.

Pumpkin Bars with Cream Cheese Frosting

Ingredients

  • 2 cups flour

  • 2 tsp baking soda

  • ½ tsp salt

  • ½ tsp cinnamon

  • 2 cups sugar

  • 4 eggs

  • 2 cups pumpkin

  • 1 cup canola oil

  • Frosting: 3 oz cream cheese

  • Frosting: ½ cup butter

  • Frosting: 1 tsp vanilla

  • Frosting: 2 cups powdered sugar

Directions

  1. Preheat oven to 350 degrees.

  2. Beat together the first 5 ingredients, (flour - sugar) in a large bowl. Add the eggs, pumpkin and oil. Mix until thoroughly combined.

  3. Pour into a cookie sheet lined with parchment. If you don’t have parchment, spray the cookie sheet with olive oil for each clean up.

  4. Bake in the oven for 20-25 min. When a toothpick comes out clean, they are done. Set aside to cool.

  5. Once cool, frost, (directions below), cut into bars and serve!

  6. Frosting: Combine all ingredients in a large bowl and beat together until smooth. You may need to add more milk or powdered sugar to get the taste and consistency right. Spread over cooled bars.
