We love ours topped with berries, whipped cream and syrup.
Ingredients
1 cup flour
1½ teaspoons sugar
½ teaspoon baking powder
¼ teaspoon salt
2 large eggs, separated
1 cup milk
2 tablespoons melted butter
½ teaspoon pure vanilla extract
Directions
In a large bowl, whisk together the flour, sugar, baking powder, salt, egg yolks, milk, melted butter, & vanilla extract.
In a clean bowl, beat the egg whites until stiff, but not dry peaks form. Using a rubber spatula, fold about ⅓ of the egg whites into the batter to lighten it, then fold in the rest just until no white streaks remain. Use the batter right away.
Place in ebelskiver pan ⅓ full and top with any desired toppings to be in the center, (Nutella, raspberries, chocolate chips, etc). Cover the filling and when edges start to crisp, flip over. Enjoy!
